Banh Bot Loc is a Vietnamese dumpling made with tapioca flour and filled with a savory mixture of pork belly, shrimp, and mushrooms, wrapped in banana leaves and steamed to perfection.
1. Marinate pork belly with fish sauce, sugar, anatto oil (or paprika), black pepper, and mushroom seasoning.
2. Sauté marinated pork belly with shallots until some of the fat is rendered, then add the minced wood ear mushroom and shrimp. Adjust seasoning to taste and set aside.
3. Prepare banana leaves for wrapping, cutting the fibrous edge to tie the wrapping together.
4. Combine tapioca flour, water, oil, and salt, mixing well. Heat the mixture on low-medium heat and stir until it thickens into smooth dough.
5. Spread some batter onto a smaller banana leaf, add the filling, then fold and wrap the leaves. Tie two dumplings together using leaf string.
6. Steam the wrapped dumplings for 15 minutes and enjoy with chili fish sauce.
