A flavorful Vietnamese soup made with tender oxtail, beef meatballs, and a fragrant broth infused with spices. Served over pho noodles and garnished with fresh onions and cilantro, it makes a hearty meal.
1. Parboil the oxtails and clean them with salt and cold water.
2. Add oxtail, daikon, shallots, ginger, and water to a pot. Bring pot to a boil and skim impurities whenever necessary.
3. Add salt, palm sugar, mushroom seasoning, and msg. Place star anises and cinnamon sticks into a tea bag and add to the pot. Let it simmer with the lid slightly open on low-medium heat for about 2 hours or until oxtails are tender. Remove excess fat if desired, but leave a little for richness.
4. Parboil beef meatballs, then add to the pho broth. Adjust the broth's taste with additional fish sauce to your liking.
5. Serve with pho noodles and garnish with chopped onions and cilantro.
